Recipe of the week
Here in the tropical climate of Tamarindo in Costa Rica, we eat a lot of different salads. This week a few salad and dressing recipes.
Beet salad with fruits and a lemon/wine dressing.
Cooke the beet and let it cool off. Cut it in pieces. Add onion, apple, mango (and resins and notes if you like) also cut in pieces. Make a dressing of lemon juice and red wine, flavored with pepper, nutmeg, cinnamon and may be sugar if you want.
Id salad with a sour- sweet dressing.
Use for the salad red and green id, onion and celery, all cut in pieces. Make the dressing of lemon juice, white wine, tomato sauce (real, no ketchup please), flavored with (hot) pepper, curry and dark sugar.
Mix in pieces cute avocado, onions and id. Dissolve a piece of blue cheese in white wine, it needs to have more or less the same thickness as mayonnaise, add pepper.
